Foundera qualified SCA Coffee Specialist, matt has been a stickler for coffee standards since the third wave first reached Asian shores. He cultivated his coffee obsession in Hong Kong in the early 2010’s, where he noticed that as specialty coffee became more widespread, the standards defining it began to erode. House of Yoreh Coffee was founded from Matt’s intent to transform the simplest ritual into an artistic, stylish, and uncompromisingly high quality experience, built around seasonality, producer relationships, and brewing methods that honour origin character, but offer a unique artistic spin.
matt wants to refine what ‘specialty coffee’ actually means in this industry. He sees it overused as a marketing gimmick rather than an achievement that proves the coffee shop has input and/or control over every stage of the coffee-making journey - farm, distribution, roasting and brewing.
he often evaluates new coffees using a modified cupping protocol that blends SCA standards with sensory practices borrowed from wine tasting, helping guests understand flavour through story rather than jargon.
